黃宏銘的台灣味|四破脯燒茄段、芭樂牛柳粒

在彰化城鄉區域如果要享用五星級的美食料理,難免舟車勞頓跑一趟大都會地區!但自從埔心鄉大溪路上的宏銘廚房出現後,小地方也吃得到五星級餐廳的創意料理。

這是黃宏銘對在地鄉親的用心與用情。擁有十餘年五星級飯店美食料理經驗,他在自己的廚房玩得可開心,一道道創意美食令人驚艷,尤其是「砂鍋大排翅」與「酸菜烤豬腳」,品嚐過後齒頰留香,回味無窮。

黃宏銘自我期許「精緻細膩的服務」與「精益求精的料理研發」精神,在他粗曠的外表下,對料理卻有顆細膩的心。

In the past, people in rural areas of Changhua County needed to have a long drive to urban areas to enjoy more exquisite foods. But after Hung-ming's kitchen on Daxi Road, Puxin Township, opened, it is possible for people in rural area to have fine and innovative cuisines now.

With his passion for local people, Hung-ming Huang, who has over ten years' experience in cooking in great hotels, loves to create various innovative dishes to surprise his customers. His “Steamed Shark Fin” and “Roasted Pig's Foots with Pickled Mustard Greens” are well-known for their deliciousness.

Huang's goal is to achieve even finer services and innovations. Under his wild appearance, he has a delicate heart for his culinary arts.

四破脯就是曬乾的四破魚乾,老媽說吃四破魚,總會想到日據時代的童年時,二次世界大戰,美軍日夜轟炸台北城,媽媽與家人躲到九份山上躲空襲。家人下山買菜,就是帶四破魚乾回來紅燒茄子,那個年代能吃到魚算是幸福的。 而我的童年則是在大人插秧、收割、忙進忙出的農村裡度過,農忙時,媽媽一人就能煮出滿足全家的佳餚。記憶深處,總是媽媽無聲的微笑與茄子香甜的滋味。

豬絞肉..................150克
四破脯..................100克
豆豉........................10克
蒜碎..........................5克
去籽辣椒段.............50克
蔥段........................50克
沙拉油..................600克

│調味料:

蔭油膏、糖、水、太白粉、鹽

│Ingredients

Eggplants 300g, Minced pork 150g, Dried Japanese scads 100g, Fermented soybeans 10g, Minced garlic 5g, Chilli pepper (remove seeds) 50g, Scallion 50g, Oil 600g

│Seasoning

Condensed soy sauce, sugar, water, potato starch, salt

芭樂牛柳粒 Fried Diced Beef with Guava │ 創意新料理

埔心芭樂的特點是入口清脆甘甜,將它入菜,別有一番風味。菲力牛柳、芭樂、紅甜椒、紫洋蔥等,所有的食材皆切成約三公分左右粒狀,下鍋快速拌炒即成。

Puxin's Guava is sweet and crisp, and can be used in a dish to create unique flavor. Just cut every ingredients – fillet mignon, guava, red bell peppers, red onions – into diced, 3cm pieces and fry them in a pan quickly.

埔心在地農特產,其外觀表皮光亮翠綠,咬勁清脆甘甜,而其果實營養豐富,內含多酚類及黃鹼類、纖維素、維生素A、B2、C、Ca,尤其維生素C非常豐富,是非常好的天然保健養顏食品。

Being a Puxin's local agricultural product, pearl guava has a lime green colored skin with crisp and sweet flavors. It has abundant nutrients, including polyphenols, fiber, Vitamin A, B2, C, calcium, especially Vitamin C, which makes guava a natural beauty treatment.
